Largest enchilada -
Mexico City sets world record
 MEXICO CITY, Mexico--Residents the humble neighborhood of Iztapalapa cooked up a 230-foot-long (70-meter-long), almost 1 1/2-ton (3,144 pounds) enchilada, a traditional Mexican food, during the National Enchilada Fair at Iztapalapa in Mexico City - setting the new world record for the Largest enchilada .

The World's Largest Enchilada was made of corn tortillas, white onions, serrano chilis, green tomatoes, avocado, cheese, cream and a sea of salsas, among other ingredients.

Enchiladas are tortilla shells filled with beef, vegetables, cheese and sauce and are served warm.

 Chef Pablo Hernandez de Alba said it was tricky to figure out how to turn the tortilla without it breaking.

"The hardest thing was figuring out how to make the tortilla, how to do it so we didn't have to turn it over, so it wouldn't break," he said.

    A local tortilla shop named Calderon created a special machine that would roll out dough to create the extensive tortilla.

"With this Guinness World Record we are showing the world that Iztapalapa is a high-level tourist destination," said Mexico City tourism secretary Alejandro Rojas.

 Guinness World Records representative Ralph Hannah 'verified' the record.
"This is the first time someone establishes this record. People have tried this before in Mexico and in the United States but they couldn't fulfill the rules to have a record," Hannah said. [our record breakers says the same; probably even Guinness wouldn't comply to most of their own strange rules; seems like paying their ridiculous high 'adjudication' fees heps?]

 Mexico City has gone for a number of world records recently, including the largest number of people dancing Michael Jackson's "Thriller" and most people kissing simultaneously.
