Monday, December 20, 2010 Largest cake sculpture: Ritz-Carlton chefs set world record DOHA, Qatar-- As part of the Qatar National Day celebrations,
a team of 25 hotel chefs from the Ritz-Carlton- Doha (under the guidance of the hotel's Executive Chef Matthew Morrison) worked for 1,176 hours (six days) to prepare a cake sculpture weighing 1,670kg, measured 8m in length, 4m in width, 16cm in height - setting the new world record for theLargest cake sculpture.

A team of 25 hotel chefs worked for 1,176 hours (six days) on the Qatari map-shaped, vanilla cake with butter-cream icing, which by the time ready had a potent 480kg of sugar, 10,800 eggs, 800kg of flour and 302kg of butter, Ritz-Carlton executive chef Mathew Morrison said.
"We are very proud given this excellent opportunity to enter the Book of Records, and to showcase our culinary expertise with such a unique piece on the occasion of Qatar National Day," Morrison said.
The sheer magnitude of the work meant thelargest cake sculpture in the worldhad to be made with the participation of over two dozen chefs, led by hotel's pastry chef Khalid Rashwan.
"This was unusual for us. The biggest cake we normally make weighs 10kg. We are so proud to have done it for Qatar," said Rashwan, who has put in 12 years at the Ritz-Carlton.
A slew of Guinness World Records guidelines had to be followed to prepare theWorld's Largest Cake Sculpture. First, the sculpture had to depict a recognisable subject or image and not simply a decorated cake; it had to be made entirely of cake, frosting, fondant and edible elements without an internal support structure, and though multiple pieces were used, the final sculpture, once frosted, had to appear continuous or "3-dimensional".
The previous Guinness World Record for the largest cake sculpture was 5.17m-long, 2.67m-wide and was set in Zirndorf, Germany.
Guinness World Records also recognized the Largest fruit cake: it weighed 281.1 kg (619 lb 72 oz) and was made by TRD-Tnuva Romania Diaries (Romania) in Bucharest, Romania.
According to Guinness World Records, the longest onion cake measured 27 m (88 ft 6 in) and was made by Hans-Dieter Slobodkin and members of the Dürrmenz-Bäcker bakery (Germany) in Mühlacker, Germany.
